The mountains of Santa Rosa, Guatemala are the remnants of an ancient volcano chain and the valleys which wind through the district are lush with vegetation, fed by the fertile soil left behind by those old eruptions.
Los Nacimientos sits on the very edge of one of the craters left behind, now filled with a lake of startling blue - Laguna Ayazara. The warm days, cool nights and plentiful water all combine to create a coffee growing nirvana.
Red currants, bush honey and notes of cocoa and caramel all combine to create a cup which is silky smooth; the sweetness of the dessert flavours tempered by the clean burst of ripe berries.
The acidity is clean and crisp, a subtle green apple freshness that complements without overwhelming. Candied orange lingers in the finish as a soft close to a delightful cup.
Cold drip: dialled in right this becomes a silky chocolate bomb while giving you a wonderfully clean cup. The berries take a back seat to the all-time aromatics of cocoa and caramel but play a role in giving the blend some palate-cleansing brightness.
Filter: enjoy the aromatics of the ground coffee before you brew, because they are heaven! Look for that green apple fizz in a pourover, or amp up the berry ripe goodness by brewing for a little longer in a moccamaster.
